POMEGRANATE SWEET POTATO

This can be enjoyed as a light and nutritious meal or as a side dish. The natural sweetness of the nutrient-rich sweet potato pairs well with the tangy, slightly tart burst of the pomegranate seeds. The healthy fats from the avocado also aid in the absorption of vitamins from the sweet potato.

Ingredients

  • 1 organic sweet potato

  • 1/4 c avocado, mashed

  • 1/2 c pomegranate seeds

  • pink salt

  • freshly cracked pepper


Directions

Preheat oven to 425 degrees.

Scrub the potato clean and poke several holes in it using a fork. Wrap it in foil and bake for 50 minutes until cooked through and soft.

While that bakes, using about a quarter of an avocado, mash it with a fork and set aside. Option to drizzle fresh lemon juice over it.

Cut open your pomegranate and remove all the seeds. Set aside.

Place the potato into a bowl. Remove the foil and cut it with a knife. Top with the avocado, pomegranate seeds, salt, and pepper.
