GRANOLA BARS

These are a healthy snack option without added sugar. They are full of fiber, protein, and healthy fats to help keep you full and satisfied.

Ingredients

  • 1 flax egg (1 T ground flax with 2-1/2 T water; let sit a few min)

  • 1-1/4 c GF old-fashioned oats

  • 1/4 c GF oat flour

  • 1/4 c pure maple syrup

  • 1/4 c sunflower butter

  • 1 t cinnamon

  • 1/2 t pink salt

  • 1 c chopped dried fruit (I used raisins, apricots, cherries & cranberries)

  • 1 c chopped nuts & seeds (I used pepitas, almonds, walnuts & sunflower seeds)


Directions

Preheat oven to 350 degrees.

Make your flax egg and let it sit for a few minutes. Add remaining ingredients to a bowl and stir to combine. Next, stir in your flax egg.

Line a 6x6-inch dish with parchment paper. Press dough evenly into the dish and bake for 25 minutes.

Let cool completely before cutting into bars.
