PUMPKIN PIE OVERNIGHT OATS

Having pie for breakfast will make your fall mornings extra cozy! This recipe only takes 5 minutes to prepare and will be ready for you when you wake up in the morning—made with pumpkin puree, hearty oatmeal, raisins, warm spices, pure maple syrup, crunchy pepitas, and pecans.

Ingredients

  • 1/2 c organic old-fashioned oats

  • 1/3 c pumpkin puree

  • 1/2 c unsweetened almond milk

  • 1-1/2 T pure maple syrup

  • 1-1/2 T chia seeds

  • 1/4 c raisins

  • 1 t cinnamon

  • 1/4 t nutmeg

  • 1/2 t vanilla

  • pinch of cloves

  • pinch of pink salt

  • 1 Graham cracker or cookie, crumbled (I used a Belvita breakfast cookie)

  • 1 T raw pepitas

  • 1 T raw pecans, roughly chopped


DIRECTIONS

Combine the first 11 ingredients in a mason jar and stir until well combined.

Top with the cracker or cookie crumbles, pepitas, and pecans, and refrigerate overnight.
