HEALTHY ENERGY BARS
These are a delicious, healthy snack made primarily from nuts and seeds. They are full of fiber, protein, and healthy fats to help keep you full and satisfied.
Gluten-Free, Dairy-Free
Ingredients
3/4 c raw almonds, sliced
1 c raw almonds, whole
1-1/2 c raw cashews, whole
1 c raw pepitas
1/4 c organic goji berries
1/2 c organic chia seeds
1/2 c organic unsweetened coconut flakes
1 t vanilla extract
1/2 c organic raw honey
1 T avocado oil
1/2 t pink salt
1/2 c dairy-free dark chocolate chips
1 T coconut oil
Directions
Preheat oven to 325 degrees.
In a bowl, combine all of the nuts, seeds, goji berries, and coconut flakes. Toss to combine.
Pour in the honey, vanilla, avocado oil, and salt. Toss again and allow to sit for 5 minutes to help the chia seeds thicken.
Line a baking pan with parchment paper and transfer the mixture to the pan, pressing it down to help compact it into an even layer. Bake for 25-30 minutes.
Let cool completely, about an hour. Melt the chocolate and coconut oil and drizzle over the top. Cut into bars and store in the fridge all week in an airtight container.
