GREEN GODDESS PASTA
An easy and delicious plant-based meal that’s bursting with flavor and packed with protein-rich beans, nutrient-rich spinach, and hemp seeds. Use your favorite pasta and your favorite white bean for this one.

Ingredients
1 lb pasta (gluten-free, rice pasta, etc)
1 package of fresh spinach (5 oz)
1 can of white beans, rinsed and drained
3 garlic cloves, minced
2/3 c nutritional yeast
1/3 c hemp seeds
Juice of a whole lemon
1 t of each: basil, onion powder, parsley
1/2 t of each: pink salt, pepper
1/4 c reserved pasta water
Directions
Cook pasta according to the package.
Sauté the spinach and garlic for a few minutes until it’s wilted.
To a food processor, add the beans, spinach, garlic, nutritional yeast, lemon juice, and remaining spices and blend well. Add some of the reserved pasta water until you get the desired consistency.
Pour the sauce over the pasta and enjoy!
