CREAMY MUSHROOM BEAN SOUP

When it’s cold outside and you need some warmth and comfort… in a healthy way! This delicious soup is made with beans, pasta, spinach, mushrooms, and nutritional yeast.

Ingredients

  • 1 shallot, diced

  • 4 garlic cloves, minced

  • handful of fresh spinach, chopped

  • 2 c vegetable broth

  • 8 oz baby bellas, chopped

  • 8 oz favorite pasta

  • 1 can of northern beans, rinsed and drained

  • 2 c nut milk

  • 3 T nutritional yeast

  • 1/2 t each of dried basil, oregano, parsley, garlic powder, lemon pepper, onion powder

  • 1 t Himalayan pink salt

  • freshly cracked pepper (to your liking)

  • vegan parm (for topping)


Directions

In a soup pot, sauté shallot, mushrooms, and garlic until softened.

Pour in the broth, nut milk, and add spices. Bring to a low boil. Add the pasta and cook for about 8 minutes or until al dente.

Add the beans, spinach, and nutritional yeast. Cook for 2-3 minutes or so. Option to serve topped with vegan parmesan.
