CARROT CAKE ENERGY BALLS

These no-bake energy balls are a perfect little snack. Made with healthy fats, fiber, and protein, these tasty treats are great for a quick nutritious pick-me-up!

Ingredients

  • 1 c old-fashioned rolled oats

  • 1 c pitted Medjool dates

  • 2 carrots, grated

  • 1/4 c crushed pineapple, drained

  • 1/4 c raw pecans

  • 1/4 c raw pepitas

  • 1/4 c raisins

  • 1/4 c chia seeds

  • 1 t vanilla

  • 1 t ground cinnamon

  • 1/2 t ground ginger

  • 1/4 t ground turmeric

  • 1/8 t ground clove

  • 1/4 t pink salt

  • shredded unsweetened coconut (optional)


Directions

Add everything to a food processor and blend, scraping down the sides. If you’d like more texture, add more nuts and raisins.

Roll into balls. Option to coat in coconut. Store in the fridge for a few days.
