Dairy Free
Ingredients
2 lbs boneless skinless chicken thighs
medium-sized bunch of broccolini, chopped
1 T avocado oil
1 t pink salt
1/2 t each: cracked black pepper, basil, oregano, garlic powder, onion powder, paprika, lemon pepper
juice of 1 lemon
1 T DF butter
3 garlic cloves, minced
1/2 c orzo
1-1/2 c broth (chicken or vegetable)
1/3 c DF Greek yogurt
1/3 c nutritional yeast
1 can of cannellini beans, drained and rinsed
Directions
Preheat the oven to 400 degrees.
Heat the oil in an oven-proof skillet and add the chicken. Season it and sauté each side for about 5 minutes. Remove from the pan and set aside.
Add the butter, broccolini, garlic, and orzo to the pan. Sauté it all for a minute or so to absorb the flavors. Add the broth, nutritional yeast, and yogurt. Stir to combine and bring to a boil. Let it simmer on medium-low for 4-5 minutes.
Add the beans and chicken back into the pan. Bake for 20 minutes.
Enjoy!
