CHICKEN BROCCOLINI ORZO IN LEMON CREAM SAUCE

This balanced dish combines tender lean protein, fiber-rich creamy beans, and vibrant nutritious greens in a dairy-free sauce for a satisfying meal with bright citrus flavor and a silky finish. (You can substitute organic extra-firm tofu to make this meal plant-based.)

Ingredients

  • 2 lbs boneless skinless chicken thighs

  • medium-sized bunch of broccolini, chopped

  • 1 T avocado oil

  • 1 t pink salt

  • 1/2 t each: cracked black pepper, basil, oregano, garlic powder, onion powder, paprika, lemon pepper

  • juice of 1 lemon

  • 1 T DF butter

  • 3 garlic cloves, minced

  • 1/2 c orzo

  • 1-1/2 c broth (chicken or vegetable)

  • 1/3 c DF Greek yogurt

  • 1/3 c nutritional yeast

  • 1 can of cannellini beans, drained and rinsed


Directions

Preheat the oven to 400 degrees.

Heat the oil in an oven-proof skillet and add the chicken. Season it and sauté each side for about 5 minutes. Remove from the pan and set aside.

Add the butter, broccolini, garlic, and orzo to the pan. Sauté it all for a minute or so to absorb the flavors. Add the broth, nutritional yeast, and yogurt. Stir to combine and bring to a boil. Let it simmer on medium-low for 4-5 minutes.

Add the beans and chicken back into the pan. Bake for 20 minutes.
